Recipe: Baked Cauliflower with Dukkah Spice

Cauliflower here, Cauliflower there … Cauliflower everywhere.

Cauliflower has become a staple food in my kitchen and it has replaced a lot of high carb alternatives, such as rice, pizza / cheese bread, and mash.

And most recently I have discovered what a great dish baked cauliflower is. Prepping cauliflower can be a bit bothersome but with a small blender (for smaller portions) or for larger portions I get my Kitchen Aid into action – and then I just whizz through it.

Ingredients

1 medium head cauliflower
1-2 cloves garlic, crushed
1tbsp olive oik

For the spice mix

1tbsp chopped hazelnuts
1tbsp sunflower seeds
1tbsp dukkah spice mix (I used Waitrose’s, but really ought to make my own)

Preheat the oven to 200C/400F/Gas 6

Grate the cauliflower and transfer to ovenproof pan. Mix in the garlic and the olive oil. Bake in oven for 20 mins at 200C. In a pan over low heat toast chopped hazelnuts and sunflower seeds with the dukkah spice mix (or other spices you like).

Remove cauliflower from oven and top with spice and seed mix. Serve straight away.
