Recipe: Almond Tomato Salad with fresh herbs

I’m fickle with regards to side dishes … and this is my new favourite, and I hope you like it too. I am going to let the photos and the ingredients speak for themselves …



serves 4

100g almonds, toasted and choppedIMG_4826
400 g cherry tomatoes, halved or quartered if large
1 red bell pepper, cut in small pieces
1 handful fresh basil, chopped
1 small handful chives
2 tbsp olive oil
1 tbsp balsamico, I used white but red can also be used
salt and freshly ground pepper to taste

Toast the almonds in a bit of oil on a hot pan. Transfer to a plate and leave them to cool. In a bowl mix the vegetables and herbs together. Mix in the almonds. Drizzle with olive oil and balsamico. Season to taste with salt and pepper and mix well.

Serve straight away and enjoy!
