Who would have thought it – white cabbage and minced beef together in a pot – and out came a tasty, filling and cheap meal. Even M, who usually avoids anything with cabbage in it, had a second helping. The ultimate seal of approval!
It does take a bit of time to make the dish so I will suggest making a large pot and then freeze in suitable portions. During the week time is always a bit of an issue in the evening. We like to catch up on our day over dinner, but we don’t want to spend too much time cooking every night so I always try to have something in freezer that’ll make an easy meal and this has become one of our favourites.
1 onion (diced)
2 cloves of garlic (crushed)
500g minced beef
1 small head of white cabbage (finely sliced)
1tbsp tomato concentrate
300ml (3dl) water
1tsp sweet chili powder
2tsp curry powder
salt and pepper to taste
Melt the ghee in a large pot. Over a low heat fry the chopped onions until they are soft. Add the garlic with the sweet chili powder and fry for a couple of minutes while stirring. Add the minced meat and brown the meat. Stir in the finely chopped cabbage and stir for another couple of minutes, add the tomato concentrate, the water, curry powder, salt and pepper and mix well before covering with a lid. Leave to simmer over a low heat for about 60 minutes stirring occasionally. If it dries out add a little bit more water, but you don’t want it to be too wet.
If you want to you can add either chopped mushrooms or grated carrot, or both, to the meat and cabbage after it has boiled for about 30 minutes.
Sprinkle with parsley and voila, a delicious winter dish.
