Basil & Pine Nut Pesto – two versions: classic and dairy free

Oh yes, that old, but delicious classic. The basil I got in my window sill is thriving and it was time to get blitzing. This is a simple recipe – pesto is always made to taste, so adjust the ingredients to your taste.

As part of my Whole30 I decided to attempt to make a dairy free pesto and it worked surprisingly well. Delicious and easy peasy! Enjoy!

Both versions are listed below.

Ingredients

Classic:

50g pine nuts
50g parmesan cheese
2 handful fresh basil
100ml (1 dl) olive oil
salt and pepper to taste

Dairy free:

50g pine nuts
1-2 garlic cloves
2 large handful fresh basil
100ml (1 dl) olive oil
salt and pepper to taste

Toast the pine nuts lightly. Put all the ingredients except the salt and pepper into the food processor. Whiz until smooth and then taste with salt and pepper. Leave to rest for 10 minutes, taste again and correct seasoning.
