This dip or simplified guacamole has become a favourite and so far it’s been great with anything I decided to serve it with. You can add any fresh herbs and spices that you like – so blitz away!
1-2 tbsp lime or lemon juice (fresh)
1/4 – 1/2 tsp dried chili or 1 fresh chili (deseeded)
salt and pepper to taste
Halve and stone the avocados and use a spoon to scoop out the flesh into a bowl. Whiz the avocado with a hand blender until smooth. Add lime or lemon juice, the chili, salt and pepper and blend again until mixed.
Leave to rest for 10 minutes, taste again and correct seasoning.
Someone told me that if not serving straight away, sit the avocado stone in the guacamole (this helps to stop it going brown), then cover with cling film and chill until needed. I have not tried this myself as this recipe is so easy to make that I usually mix it together just before serving.
