The courgette plants (or at least one of them) is growing rapidly and I am still testing recipes so I am ready for the many courgettes I will, finger crossed, get over the summer.
Since I bought my mandolin I also wanted to have a go at making courgette ribbons, and why not throw in some of my other favourite ingredients, feta, pine nuts and fresh mint, and the result was this tasty summer salad.
And now I have so much fresh mint in my allotment that I need to look into how to make the best use of it. Any ideas?
2 small courgettes
50g pine nuts
50ml olive oil
juice of 1/2 lemon
1tsb chopped fresh mint
salt and freshly ground pepper
On the mandolin cut the courgette lengthwise. If you do not have a mandolin use a vegetable peeler or cut the courgette as thinly as you can. Toast the pine nuts lightly in a pan.
In a bowl, mix together courgette, toasted pine nuts, mint and olive oil, and season with a pinch of sea salt and fresh ground pepper. Crumble over feta and serve immediately.
