It’s been quiet on the blogging front because of a lovely long weekend in Bordeaux viewing the sights and sampling the local produce. I could move to France simply because of their food markets, so I just had to buy some sausages and bring them home with me … and they were delicious with a parsley & walnut pesto! 60g parmesan cheese
1 large handful flat-leaf parsley leaves (no stalks)
100 ml (1 dl) olive oil
salt and pepper to taste
Put all the ingredients except the oil, salt and pepper into the food processor. Whiz until smooth and then add the oil, a little salt and pepper. Leave to rest for 10 minutes, taste and correct seasoning.
