Another favourite on the dining table is creamed leeks. It’s ready to eat in 15-20 minutes and great with any type of meat. I do believe that cream can make
almost anything taste good, and any vegetable that has been “creamed” is usually delicious.
200-250ml (2-2 1/2 dl) double cream
Salt, pepper and nutmeg to taste
Melt the butter in a frying pan. Fry the finely sliced leaks on a low heat for about 5 minutes. Add half of the cream and let it simmer, while stirring occasionally. Add the rest of the cream and season generously with salt, pepper and nutmeg. When the cream has thickened it is ready to serve.
For a more High Fat version add some grated parmesan cheese.
Leeks are borderline in a low carb diet, just like onions, but even though they have more carbs than other vegetables due to natural sugars they are ok to include in small amounts – unless if you’re on a strict LCHF diet.
