Croque Monsieur LCHF style

Bonjour! I hope you had a nice morning. Mine started very well with a lovely Croque Monsieur … LCHF style, of course. A Croque Monsieur is basically a grilled ham and cheese sandwich and it can very easily be made with fried eggs instead of bread.


2 eggs
1 slice of cheese
1-2 slices of ham
salt and pepper to taste

Place a frying pan (it has to be big enough for two fried eggs) on medium heat and add butter. Let the butter brown a little and then crack one of the eggs into the pan. Cook until the whites are getting firm, but not fully cooked, and then add the cheese first and then the ham. Crack the second egg into the pan. When the second egg is firm, and the cheese is melting, then place the second fried egg on top of the first egg; sunny side down. Sprinkle with salt and freshly ground pepper. Bon appétit!
