Courgette Fritters

Last year I had an abundance of courgettes in my allotment, and I looked everywhere for ideas on what to do with them … cakes, bread, pickled, courghetti … and I was even so desperate that I left some of them to grow for another week, big, big mistake! they turned into monsters and I was stuck with around 8 kgs of courgettes, and I really didn’t know what to do with them. 

I will be planting courgettes in my allotment again this year, but now I am prepared. I have been practicing several recipes, and this is one of them. And watch this space for more courgette based recipes ….


Makes about 8

1 medium courgette
30g of defatted sesame flour
2 medium eggs
30g grated parmesan cheese
1/2-1 tsp cayenne pepper
salt and pepper to taste

Grate the courgette. Get rid of excess moisture by adding 1 tsp of salt to the grated courgette, and leave for 5 minutes in a colander. With a spoon press the liquid out. Tip flour into a bowl. Make a well in the centre, break in eggs, and whisk together to make a smooth batter. Leave to rest for 5-10 minutes. Stir in courgette and season well. Heat oil in a non-stick frying pan. Add tablespoons of mixture to make fritters, and cook for 2-3 mins on each side until lightly golden.
